Gluten-free French toast

Gluten-free bread can be good, but anyone who's tried it knows that it can be a bit dry even when fresh and after a day or two it gets worse.

But French Toast works perfectly whether the bread is fresh or dry to start with! Tastes great and can use up those extra slices you've got left over from the night before.

Ingredients:

4 thick slices of gluten-free bread
2 eggs
1/2 cup milk
A good shake of salt and pepper to taste
Maple syrup for topping

Method

1. Whisk the eggs, milk, salt and pepper in a flat bowl
2. Dip each bread slice liberally in the mixture, trying to get it to soak up as much liquid as possible, then transfer to a hot frying pan immediately
3. Fry for 2-3 minutes each side until golden brown
4. Serve immediately with Maple Syrup or sprinkled with icing sugar.
